Ingredients
1/2 cup Cashew butter (runny texture works best)
3/4 cup Maple syrup
1/4 cup Coconut oil (melted)
1 tsp Vanilla extract
1 cup Dark chocolate chips
Directions
Prepare the pan:Line an 8 x 4-inch (20 x 10 cm) loaf pan with parchment paper.
Mix the base:In a medium bowl, stir together cashew butter, maple syrup, melted coconut oil, and vanilla extract until smooth and glossy.Pour this mixture into the prepared pan and spread evenly.
Melt the chocolate:Melt dark chocolate chips using a double boiler or microwave in 30-second intervals, stirring between each until smooth.
Assemble:Pour the melted chocolate over the cashew mixture and smooth with a spatula.
Freeze to set:Place the pan in the freezer for about 2 hours (or overnight) until the fudge is firm.
Slice & enjoy:Once set, slice into rectangular pieces. Sprinkle with flaky salt if desired — it enhances the chocolate flavor beautifully!

Storage: Keep frozen in an airtight container for up to 1 month.
